Finally a relaxed weekend with time to go to the market and buy fresh vegetables and time to cook a delicious dinner.

I cut the egglpants in slices and added them in a tray that can be used for cooking in the oven.
The tomatoes, peppers, onions, garlic, I cut them in small pieces and mixed them all together with a glass of white wine and the fresh herbs and let them for about 30 minutes in the frigde so that all flavours would mix together. I also grated the cheese.
I put the vegetables on the eggplants in the tray and added the cheese on top.
Put in the oven at about 180 degrees for about 40 – 50 minutes and this is what came out of it 🙂
